Tiffin Teahouse and Eatery - a few words from Nick the Exec Chef at Tiffin regarding the menu and our suppliers.
I can understand that on the odd occassion a diner may seem suprised by the plate of food that arrives! This is obviously not designed to mislead, but rather as part of the deliberate intention that some of our dishes should be presented with a 'twist 'to capture the fun of the food, and equally as importantly, cooked, presented and served to the highest level within the restrictions of the kitchen and the wonderful team looking after you. Presentation, taste and service are everything to us. Additionally we are fast becoming known for our range of Gluten free and Celiac foods thanks to one of our cooks who is a nutritionist.
Always remember that Tiffin operates an open book policy on where the produce we use comes from. Whether it is letting you know which bay in Cornwall the fresh crab came from, who makes our Somerset cheeses, which farm supplies our west country meats, who to speak to at artisan bakers or where our scrummy cakes and deserts come from, we are always happy to give you suppliers names and numbers, and we often do! Our team will always try their best to give you the knowledge you need.
I noticed that a discussion was had the other week regarding 'Tiffin' Corned Beef Mash. I am sad that the diner did not enjoy the experience, but my thanks to the other people commenting on their wonderful experiences. This dish is a typical fun twist on an old classic. The mash is made that morning with cream and seasoning cooked in the oven, the onion gravy from fresh chopped red onions and good stock, the corned beef kept whole and cold to avoid making it greasy all topped with a runny poached egg and served with a smile. The sliced bread is from Hobbs bakery (artisan) in Chipping Sodbury and never from a supermarket. 'mash' or 'hash' an easy mistake to make, but that's the fun of Tiffin! I really hope that the diner enjoys their next visit.
Nick.
